Carrot Ginger-Honey Soup


Carrot Ginger-Honey Soup

Cook Time: 40 min

Servings: 8

Ingredients:

1 tablespoon butter
1 cup onions thinly sliced
1-1/2 pound carrots, peeled and shredded
5 cups water
1 tablespoon fresh ginger minced
2 tablespoon honey
1 teaspoon fresh lemon juice
salt and pepper to taste
cream for garnish, optional

Instruction:

In a saucepan over medium high heat sauté onion in butter until tender, do not let it brown. Add shredded carrots, water, fresh ginger, honey, lemon juice, salt and pepper. Bring to a boil then reduce heat and simmer for approximately 35 minutes. Puree carrot mixture in a food processor or blender; return to the saucepan. Ladle mixture into bowls,
garnish with swirls of cream if desired and serve hot.


Wine recommendation: Pinot Gris; Chardonnay
