A vibrant colored carrot soup of shredded carrots with a different flavor, 
the ginger adds a pungent spiciness with just 
the right amount of honey for sweetness to make this a winning combination
it is delicious!  easy to make in minutes!

Carrot Ginger-Honey Soup

Serves 6 to 8

1 tablespoon butter
1 cup onions thinly sliced
1-1/2 pound carrots, peeled and shredded
5 cups water
1 tablespoon fresh ginger minced
2 tablespoon honey
1 teaspoon fresh lemon juice
salt and pepper to taste
cream to garnish, optional

In a saucepan over medium high heat sauté onion in butter until tender but not brown. Add carrots, water, ginger, honey, lemon juice, salt and pepper.  Bring to a boil then reduce heat and simmer for 35 minutes. Puree carrot mixture in a food processor or blender; return to the saucepan. Ladle into bowls,
garnish with swirls of cream and serve the carrot soup hot.
