If you are looking for a simple appetizer hors d'oeuvre for entertaining, this is it... not only is it easy to make, it is tasty with chopped onion, enhanced with fresh Thyme leaves and cayenne pepper for a 'kick'.
 You could cut the sandwich slices into different shapes using cookie cutters, toast them early in the day then apply the spread and bake the puffs when guests arrive... it only takes a few minutes.

It is great to serve before dinner or on your patio with wine. Enjoy!

Asiago Cheese Puff Appetizer

Makes 20 appetizers

5 thin white sandwich bread slices
1 cup Asiago cheese, finely grated
2 tablespoons yellow or white onion, finely chopped
3 tablespoons mayonnaise
3/4 teaspoon fresh Thyme, finely chopped
pinch salt
dash of Cayenne pepper

Preheat oven to 400 degrees F.

Trim crusts from bread. Cut 4 round (or square) pieces from each slice. Bake on a sheet pan at 400 degrees F for 3 to 4 minutes or until lightly toasted.
This can be done in advance, covered at room temperature.

In a small bowl combine Asiago cheese, onion, mayonnaise, thyme and cayenne pepper. Spread the Asiago mixture on the toasted bread. Return to the oven, bake 5 to 8 minutes or until puffed and golden. Serve hot or cold.

Wine recommendation: Pinot Gris; Chardonnay
