Insalata Caprese is easy to make using simple ingredients of grape tomatoes, little Mozzarella cheese balls or cubes and fresh basil leaves threaded on a skewer... how easy is that! Ingredients
20 grape tomatoes
10 ounces Bocconcini, tiny Mozzarella cheese balls
20 fresh basil leaves
2 tablespoons Extra-Virgin Olive Oil
Salt and pepper, to taste
20 toothpicks

Instruction
If Mozzarella cheese is too large use a melon baller to make small rounds the same size as grape tomatoes; or cut the Mozzarella cheese into cubes; or purchase small rounds of Mozzarella cheese (Bocconcini) the same size as grape tomatoes.

Toss grape tomatoes, Mozzarella cheese, olive oil, salt and pepper together in a bowl, marinate in refrigerator 1 hours. Skewer one grape tomato, a basil leaf and one Mozzarella cheese ball or cube on each toothpick. Drizzle with more olive oil, salt and pepper if necessary and serve.


Wine recommendation: Pinot Gris; Chardonnay
