1/2 cup Romaine lettuce, sliced 1/4-inch
1/2 cup Heinz cocktail sauce
24 salad shrimp, (3 per person)
Cucumber, unpeeled, notched, sliced 1/4-inch
8 Romaine lettuce leaves, 2-inch by 2-inch pieces
2 teaspoons lemon zest
8 shot glass
8 cocktail forks
In a small bowl toss together sliced romaine lettuce, cocktail sauce and salad shrimp. Spoon into shot glasses.
Garnish with 1 cucumber
slice on rim of each glass; insert lettuce leaf, sprinkle with lemon zest and serve with cocktail forks.
