2 tablespoons fresh lemon juice
2 teaspoons parsley finely minced
8 martini glasses
1/2 cup celery, diced
1/2 cup tomatoes, peeled, seeded, diced
1/2 cup English cucumber, peeled, seeded, diced
1/2 cup red or green bell pepper, diced
2 tablespoons green onion, sliced
Kosher salt and freshly cracked black pepper, to taste
1/2 cup Chili Sauce
8 celery sticks, 4-inches long, leaves attached
8 sprigs parsley for garnish
Coat rim of glass:
Put lemon juice in a wide shallow soup bowl. Put minced parsley in another wide shallow soup bowl. Turn martini glass upside down and dip rim in
juice then in parsley; set aside. This can be done ahead.
In a large bowl mix celery, tomatoes, cucumber, bell pepper, green onion, salt and
pepper together, fold in the shrimp reserving some for the top, spoon into martini glasses being careful to not disturb the parsley. Top each
with 1 tablespoon chili sauce, add a celery stalk for a "swizzle stick", garnish with parsley sprigs and
serve this appetizer.
