Shrimp-Vegetable Cocktail Appetizer
in a martini glass with a celery stalk 'swizzle stick'

I created this with freshly chopped tomatoes, bell peppers, cucumber and green onions with cocktail sauce. Rim the glass with chopped parsley for a beautiful presentation.

Shrimp Cocktail Vegetable Appetizer

   Total Time: 20 min   Servings: 8

Ingredients:

2 tablespoons fresh lemon juice
2 teaspoons parsley finely minced
8 martini glasses

1/2 cup celery, diced
1/2 cup tomatoes, peeled, seeded, diced
1/2 cup English cucumber, peeled, seeded, diced
1/2 cup red or green bell pepper, diced
2 tablespoons green onion, sliced
Kosher salt and freshly cracked black pepper, to taste
3/4 cup
salad shrimp
1/2 cup Chili Sauce
8 celery sticks, 4-inches long, leaves attached
8 sprigs parsley for garnish

Instruction:

Coat rim of glass:
Put lemon juice in a wide shallow soup bowl. Put minced parsley in another wide shallow soup bowl. Turn martini glass upside down and dip rim in juice then in parsley; set aside.  This can be done ahead.

In a large bowl mix celery, tomatoes, cucumber, bell pepper, green onion, salt and pepper together, fold in the shrimp reserving some for the top, spoon into martini glasses being careful to not disturb the parsley. Top each with 1 tablespoon chili sauce, add a celery stalk for a "swizzle stick", garnish with parsley sprigs and serve this appetizer. This is so good, easy to make and looks spectacular!

Wine recommendation: Pinot Gris; Chardonnay
