Shrimp Cocktail Vegetable Appetizer

coat martini glass rims with minced parsley for a beautiful presentation...   

add a celery stalk for a "swizzle stick"

First Course appetizer


serves 8

Coat Martini Glass Rims with minced parsley
2 tablespoons fresh lemon juice
2 teaspoons parsley minced
8 martini glasses

Put lemon juice in a shallow wide soup bowl. Put minced parsley in another shallow wide soup bowl. Turn martini glass upside down and dip rim in lemon juice then in the minced parsley to coat the glass edge; set aside. 
This can be done ahead.


Fill Martini Glasses with Shrimp Cocktail Vegetable
1/2 cup celery, diced
1/2 cup tomatoes, peeled, seeded, diced
1/2 cup English cucumber, peeled, seeded, diced
1/2 cup red or green bell pepper, diced
2 tablespoons green onion, sliced
Kosher salt and freshly cracked black pepper, to taste
1/2 cup Chili Sauce
3/4 cup
salad shrimp
8 celery sticks, 4-inches long, leaves attached
8 sprigs parsley for garnish

In a large bowl mix celery, tomatoes, cucumber, bell pepper, green onion, salt and pepper together, fold in the salad shrimp reserving some for the top and spoon into martini glasses.  Top each glass with 1 tablespoon chili sauce, add a celery stalk for a "swizzle stick", garnish with parsley sprigs and serve. This is so good, easy to make and looks spectacular!


Wine recommendation: Sauvignon Blanc; Chardonnay
