Ingredients:

1 tablespoon extra-virgin olive oil
1/2 teaspoon Raspberry wine vinegar
1/2 teaspoon balsamic vinegar
Salt and pepper, to taste
2 cups Mesclun salad green
2 tablespoons chives, sliced 1/2-inch
5 - 6 large strawberries, sliced
2 tablespoons pine nuts, toasted
3-inch ring mould (I use an empty 29 ounce fruit can with both ends removed)

Instruction:

For the dressing, combine in a small bowl olive oil, raspberry wine vinegar, balsamic vinegar, salt and pepper; set aside.

In a medium bowl combine mesclun greens, chives, fresh strawberries and toasted pine nuts.

Place a 3-inch ring mould on each plate (I use a tuna can with both ends removed) and fill with the greens, chives, strawberries and toasted pine nuts mixture, piling as high as possible. Drizzle with the salad dressing, remove the ring mould and serve this beautiful delicious mesclun creation.

Wine recommendation: Pinot Gris; Chardonnay
