Granola
Peanut Butter Balls

Makes 3 dozen
2 tablespoons almonds, sliced, toasted 2 tablespoons sunflower seeds, toasted 1-3/4 cups quick cooking rolled oats, divided
1 cup mixed dried fruit 2 tablespoons raisins 2 tablespoons unsweetened coconut flakes
1/2 teaspoon cinnamon 1/2 cups creamy style peanut butter 1/4 cup honey 1/2 teaspoon vanilla extract
Place almonds at one end of a cookie sheet; place sunflower seeds at the other
end keeping them separated; broil 2 minutes; set seeds aside. Process almonds with 1/4 cup rolled oats in
processor to fine crumbs; place in a small bowl. This can all be done in advance.
In a large bowl combine and mix well the sunflower seeds,
the remaining 1-1/2 cups rolled
oats, dried fruit, raisins, coconut flakes, cinnamon, peanut butter, honey and vanilla. Moisten your hands
with water and form the granola mixture into 1-inch balls; roll in the almond-rolled
oats fine crumbs mixture and serve on a platter for breakfast with fresh fruit.
