Granola Balls
Peanut Butter no-bake Granola Recipe

Makes 3 dozen Granola Balls
2 tablespoons almonds, sliced, toasted 2 tablespoons sunflower seeds, toasted 1-3/4 cup quick cooking rolled oats, divided
1 cup mixed dried fruit 2 tablespoons raisins 2 tablespoons unsweetened coconut flakes
1/2 teaspoon cinnamon 1/2 cup creamy peanut butter 1/4 cup honey 1/2 teaspoon vanilla extract
Place almonds and sunflower seeds on the same cookie sheet separated; broil 2 minutes; set sunflower seeds aside. Process almonds with 1/4 cup rolled oats in
processor to fine crumbs; place in a small bowl; set aside.
In a large bowl combine toasted sunflower seeds,
the remaining 1-1/2 cups rolled
oats, dried fruit, raisins, coconut, cinnamon, peanut butter, honey and vanilla. Moisten your hands
with water and form granola mixture into 1-inch balls; roll in almond-rolled
oats crumbs and serve on a platter for breakfast with fresh fruit.
