Most men seem to love angel hair (Capellini in Italian), very thin
long strands). I have three men in my
immediate family who always request this particular type over any other. This recipe is a unique way to serve these cute little nests
by browning them first in a skillet then finishing them in chicken broth. Spoon a filling of your choice in the center of the nests.
I prefer using shrimp with a cream sauce to serve this delicious entree.

Angel Hair Pasta Nests

Yield: 6 servings
Ingredients
6 Colavita Angel Hair pasta nest (1-1/2 ounces per person)
1 tablespoon extra-virgin olive oil
6 cups chicken broth
3/4 cup heavy cream, heated
1/4 cup salad shrimp
or larger shrimp if desired
1 teaspoon dried Thyme leaves
6 basil sprigs for garnish, optional
Directions
Put Colavita nests in a deep skillet with olive oil over medium heat and brown for 2-1/2 minutes
each side.
Drain and discard the oil; add enough chicken broth to completely cover the pasta. Bring to a boil, cover with a lid
and cook 4 minutes. The nests will separate but don't worry this is normal. To re-form them, drain the chicken broth
and divide pasta equally among 6 teacups, twirl with a long-tined fork, slip off the tines of the fork onto individual
serving plates shaping each one into a nest.
Spoon the heated heavy cream around the angel hair, fill with shrimp and thyme leaves. Garnish with fresh basil
sprigs and serve.
