This quick and easy side dish bakes up in minutes and is perfect to serve with a main entree. I especially like it because of it's freshness and flavor combinations of shallots, garlic, Parmesan cheese and fresh basil.

I had to replace the basil plant in my herb garden to make this recipe because for the first time since living in Arizona, Jack Rabbits ate my basil plant completely down to the roots. The new plant is doing nicely in an elevated pot.

Stuffed Rolled Leg of Lamb

Lamb is so good, an excellent choice for special dinner parties when the lamb is young and tender.

There are many ways to prepare leg of lamb, I especially like this recipe deboning the meat and filling it with fresh basil, spinach, Parmesan cheese, etc. Rolling it up and roasting to medium rare.
